These are a quick "go-to" sweet snack that doesn't take much time and I have the the ingredients on hand. I use a muffin scoop and get 12 large cookies. You can use a smaller scoop and even drop them by a tablespoon.
Ingredients:
1/2 cup butter
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup creamy peanut butter (do not use All Natural as it makes for dry cookies)
2 teaspoons vanilla
2 cups sugar

1 cup non-sweetened coconut, toasted
3 cups quick-cooking oats

Add the first four ingredients into a 4-quart
sauce pan.

Bring to a rolling boil and hold for 2 minutes.

Remove from heat. Add peanut butter into the hot mixture and
stir until melted.

Add in vanilla

Mix in the oats and coconut. Using a scoop, drop onto wax paper.
6. Let cool until set.
